Yakitori Style Chicken Wings

Yakitori Style Chicken Wings is a new twist to an old favorite. These wings are the perfect balance of savory and sweet. They are ideal for a tailgate and just as perfect for serving with cocktails. Try these, you will love them!


Ingredients for Yakitori Style Chicken Wings:

3-5 pounds chicken wingettes

2/3 cup mirin

2/3 cup light tamari sauce

1/3 cup honey

6 tablespoons sake

2 tablespoons rice wine vinegar

1/8 teaspoon Sriracha sauce

5 garlic cloves

3 scallions, sliced white and light green for the marinade and dark green for garnish

3 tablespoons chopped ginger


Time-Saving Tips: The marinade can be prepared even a day in advance and store in the refrigerator until ready to use. The wings need to marinate for 4-6 hours so they can and should be prepared in advance.


This marinade will make enough for another pound or two of wings.

Now let' make the wings.


In a blender combine the mirin, tamari, honey, sake, garlic, ginger rice wine vinegar, Sriracha, and white and light green part of scallions to a blender. Process until fully mixed. I have a Vitamix and love it. Click HERE for more information on my Vitamix.


Simmer the marinade for about 10 - 15 minutes to reduce just a bit. Transfer the marinade to a bowl and cool. If you want, the marinade can be made in advance and stored in the refrigerator. Once cooled combine the marinade with the chicken wings in a sealable bag; refrigerate for 4-6 hours.


Preheat the oven to 450-degrees. When ready remove the wings from the baggie and reserve the marinade. Do your best to dry off the wings with paper towels. Place the wings in a single layer in a pan (or multiple pans) which has been coated with cooking spray. I use disposable pans whenever I make wings because it makes cleanup a breeze. While the wings cook return the marinade to a saucepan and cook for 15 minutes; set aside.


After roasting for 30 minutes remove the pan from the oven and flip all of the wings over. Return to oven and cook another 30 minutes until done. When they are ready, place them on a plate and garnish with the sliced scallion greens. Feel free to serve a small bowl of the cooked marinade on the side for dipping.
