Truffled Roasted Potatoes


I keep a stash of truffle salt on hand for our sons. Ethan and Steven love to sprinkle it on food when "just salt" doesn't seem to be enough. I decided to branch out and purchased truffle oil and zest. The smell is intoxicating. If you have some you know what I mean. This recipe for Truffled Roasted Potatoes is a result of my latest purchase. They are delicious, addictive, and make any meal extra special. They go with all roasts or grilled meat. These potatoes are perfect for entertaining and special enough for the holidays.


Ingredients for Truffled Roasted Potatoes:

serves 4


1 1/2 pounds small potatoes, cleaned, dried, and halved

olive oil

Kosher salt

2 tablespoons chopped parsley

1 1/2 tablespoons truffle zest

2 teaspoons black truffle oil

Now lets cook.


Preheat oven to 450-degrees. Clean, dry and halve potatoes. Or if the potatoes are big you can even quarter the potatoes. Drizzle with olive oil and season with Kosher salt. Give the potatoes a stir and pop in the oven. Roast until the potatoes are tender and golden. This should take about 40 minutes depending on the size of the potatoes.


Add the truffle zest, the truffle oil, and parsley to the cooked potatoes. Toss. Taste and season with more salt if needed.
