Back in the day when I was a vegetarian, this would have been right up my alley. Tofu takes on the role of eggs in this scramble. Speckled with veggies and flavored with turmeric and curry makes this a breakfast anyone would love.
Ingredients for Tofu Scramble:

8 ounces firm tofu
1/4 cup thinly sliced yellow squash
1/4 cup thinly sliced green squash
3 grape tomatoes, seeded and chopped
1-2 tablespoons thinly sliced green onions
1 tablespoon chopped red onion
1 teaspoon olive oil
1/4 teaspoon turmeric
1/8 teaspoon curry
Himalayan pink salt
black pepper
Time-Saving Tip: The vegetables can be prepped ahead of time and refrigerated.

Using a fork cut up the tofu into pieces that resemble scrambled eggs. Set aside.
Heat the oil in a non-stick pan. Add the yellow squash, green squash, and tomatoes. Season the vegetables with salt and pepper and saute for 1-2 minutes. Do not brown.
Combine the tofu, curry, and turmeric with the vegetables. Toss in half of the scallions and reserve the rest for garnish. Taste and adjust seasoning as needed.
