I was in the mood for a luxurious chocolate treat. While I dreamed about all of my options, I knew I would put a healthy twist on whatever I created. So I set out to make Tofu Chocolate Mousse. I pureed silken tofu with my favorite melted semi-sweet chocolate, cocoa, honey, vanilla, and a sprinkle of espresso powder. The result was the most delicious and heavenly silky, luscious, and chocolate dessert ever. I immediately fell in love with it. I was excited to share it with my family, and when I did, they loved it too. They couldn't believe that tofu had replaced dairy and eggs in this luscious pudding and immediately reached for seconds.
Ingredients for Tofu Chocolate Mousse:
1 -12-ounce package of Firm Silken Tofu
6 ounces of semi-sweet chocolate chips
1 tablespoon of honey
2 teaspoons cocoa powder
1 teaspoon vanilla
1/2 teaspoon espresso powder
I like to serve the mousse with berries.
Time-Saving Tip: Prepare this mousse the day before serving; cover and refrigerate.
We're ready to cook.
Pour the chocolate chips in a small bowl. Since everyone's microwave is a little different start by cooking for 45 seconds. It will likely need a bit more time, but it is better to undercook and then need to cook a bit more than overcook the chocolate. The first picture is the chips right out of the bag; the second one shows what the chips look like after they cook. They might still look like chips, but they're likely melted enough. With a small spoon start stirring the chips, and they will all melt. If not, just microwave for a few more seconds. Don't overcook or else the chocolate will harden.
Stir the honey, vanilla, and espresso powder into the chocolate.
Add the tofu, chocolate mixture, and cocoa to a food processor. Process until the mixture is completely smooth, scraping the side of the bowl as needed. Pour in a large bowl, or smaller ones and cover with plastic wrap until chilled.
It's ready! Tofu Chocolate Mousse is outrageously delicious and a breeze to prepare. No one will ever know that there is tofu in here unless you tell them. I promise you will love this mousse.
