Back in the 70's disco was thriving, movies were in theaters, and rotary phones were our means of communication. So much has changed, but it's funny how some foods stand the test of time and seem to reappear like old friends. For me, food has always been a part of my memories, so when a group of foodie friends invited me to join a collaboration highlighting foods of the 70's I jumped at the chance. A few dishes came to mind, but nothing stood out more to me than devouring a pot of warm melted cheese. So here's my not so unique version of That 70's Fondue. I melted Swiss and Gruyere Cheese until creamy smooth, added some wine, sherry, and spices. When slightly bubbly and hot, I immediately dug into this deliciousness and was transported in time. So here's to memories, good times and making what's old new again.
Ingredients for That 70's Fondue:
5 cups of a mixture of shredded Gruyere and Swiss Cheese
3 tablespoons of flour
1 1/2 cups dry white wine
1/4 cup of whole milk
2 tablespoon of dry sherry
1/8 teaspoon nutmeg
1/8 teaspoon white pepper
Serve the Fondue with French Bread cut into cubes and steamed vegetables.
Time-Saving Tip: Cut the bread and steam the vegetables before preparing the fondue.

Let's prepare the ingredients before we get started. Combine the cheese and flour, measure out the wine. And mix the milk and sherry.
Pour the wine into a large pot and bring to just a simmer. Turn down the heat and slowly add some of the cheese, continually whisking until the cheese is melted. Repeat the process until all of the cheese is in the pot and melted. Continue whisking and bring the fondue to a low boil. Pour in the milk mixture and add the spices and combine well. Pour the cheese mixture into a heated fondue pot.
It's ready! That 70's Fondue is so delicious. It was such a fun time dipping and eating that I'm looking forward to the next time. I hope you step back in time with me and melt some cheese.
