I gathered dates, dehydrated strawberries, cashews, pistachios, coconut, and other goodies. After a whirlwind blending session, the mixture was ready to be shaped into a bunch of bite-sized balls, and the rest, as they say, is delicious history.

Ingredients for Strawberry-Date Bites:
yields 18 bites
12 Medjool Dates pitted
1 tablespoon + 1 teaspoon strawberry powder from 1 bag dehydrated strawberries
3/4 cup raw cashews
1/4 cup + 1/4 cup raw pistachios
1/2 cup shredded unsweetened coconut
1 tablespoon coconut oil
1 teaspoon vanilla
pinch of sea salt

Pour the strawberries into the food processor and process until fine. Transfer the mixture to a bowl. I poured the entire bag in and used some in the mix and some for rolling and still had a little extra. Mix the extra powder into yogurt or smoothies.
Without cleaning the food processor, add the cashews and 1/4 cup pistachios and process until fine; then add the dates and process until fine.
Add the strawberry powder, coconut oil, coconut, and salt; process until well combined. Shape the mixture into 18 equal-sized balls.
I like to coat the bites in a mixture of strawberry powder and coconut and well as finely chopped pistachios. Feel free to roll them all in just the powder, coconut or pistachios.
They're ready! They look great and are so easy to prepare. The dates add just the right amount of sweetener, and the combination of flavors is delicious. Feel free to switch out the dehydrated strawberries for your favorite dehydrated fruit.
