
With Springtime holidays just around the corner, I wanted a salad that would brighten any table. I immediately knew that I would showcase watermelon radishes. If you've never seen one before just take a look at the beautiful pink discs lining the bowl. They are much more delicate in flavor than the small red and white ones we know so well. I also added ripe strawberries, yellow grape tomatoes, celery, and shelled pistachios which all sit atop a mound of Boston lettuce. The entire salad is drizzled with a delicious Citrus Kale-Mint Pesto Dressing. This salad is so bright, festive, and delicious. Just perfect for the season.
Ingredients for Springtime Salad:
Salad:
1 bunch of butter lettuce
1 large watermelon radish
8 ounces of ripe strawberries, quartered
1 stalk of celery, thinly sliced
1/2 cup grape tomatoes, halved
3 tablespoons shelled pistachios
kosher salt
black pepper

4 tablespoons fresh orange or tangerine juice, strained

Time-Saving Tip: The Kale-Mint Pesto can be made in advance; it will keep well in the refrigerated for a week. You can also freeze it.

All you need to do to make the dressing is to combine the pesto and the juice; set aside.
Be careful cutting the radish. Make sure that this process has your full attention. Don't you just love the beautiful slices?
First, add the lettuce to the middle of the bowl. Then place all of the sliced radishes around the rim. Sprinkle with the celery, strawberries, tomatoes, and then pistachios. Season the salad with salt and pepper; drizzle with some dressing.

It's ready! How fabulous are the colors in this salad? It so fresh tasting and delicious it's so pretty that you won't even need to put any flowers on the tables. And Citrus Kale-Mint Dressing is perfect for it. This salad would go great with any roast or fish.
