Spring Pea Medley


When springtime rolls in, I'm all about veggies prepared in the simplest way possible. This Spring Pea Medley is a mixture of snow peas and fresh sweet peas. I quickly sauteed them in olive oil and seasoned them with salt and pepper. Crisp and delicious, I like to serve them with lemon slices so people can choose to squirt some juice on these veggies. These are simply the best side dish to any dish and are special enough for holiday celebrations.


Ingredients for Spring Pea Medley:


9 ounces fresh snow peas

12 ounces fresh peas

olive oil

kosher salt

black pepper

lemon slices for serving


Time-Saving Tip: Have everything ready to cook- it takes a couple of minutes.

Heat 2 tablespoons to a non-stick pan. Once hot, add the vegetables and season with salt and pepper. Cook over high heat for about 1 1/2 minutes and add 2 tablespoons of water. Continue cooking until the peas are just cooked. I like to serve these vegetables on the crisp-side.
