Sliders with Mushrooms and Onions



Sliders seem to have an open invitation to every occasion from game day fun to graduation celebrations. These little burgers are easy to prepare, look great, and are portable. They're covered in Jarlsberg, caramelized mushrooms. and onions. And of course, there is also a special sauce. All I can say is that these are delicious.


Ingredients for Sliders with Mushrooms and Onions:

yields 8 sliders


Sliders:

1 1/4 pounds ground beef

2 teaspoons olive oil or grapeseed oil

8 ounces mushrooms, stems discarded and caps sliced

1 small onion, halved and sliced

2 square slices cheese, 1 1/2 ounces, of Jarlsberg or Swiss

kosher salt

black pepper

8 slider buns


Garnish:

8 wooden toothpicks

8 slices kosher dill pickles


Special Sauce:

4 tablespoons mayonnaise

4 teaspoons grainy mustard


Time- Saving Tips: The special sauce can be made in advance. The mushrooms and onions can be sliced in advanced; they can even be cooked an hour or two in advance. Warm before using.

Let's cook.


Combine the Special Sauce ingredients together and set aside.


Saute onion and 2 teaspoons of oil for 3 minutes. Add the mushrooms and season with salt and pepper. Saute another 4 minutes until mushrooms and onions are tender. Remove from the heat.


Divide the meat into 8 equal balls. Using the slider bun as a guide, flatter the meat so it is slightly larger than the bun. The burger will shrink as it cooks.



Season the top of the burgers with salt and pepper. Add the burgers to a hot pan, seasoned side down. Season the top of the burgers and cook a couple of minutes. Turn over and cook another couple of minutes until the desired doneness. Turn off the heat and add the cheese. Loosely cover with foil and let sit a minute or two.


Place opened buns on a cookie sheet and toast in the broiler.


Spread a teaspoon of sauce on the bottom half of the bun. Then add a burger and pile the mushroom mixture equally on each slider. There might be a little extra. Spread another teaspoon of sauce on the top bun. Top each one with a pick and pickle and...



They're ready! These sliders have my all-time favorite burger toppings. These are delicious and look great.
