With the holiday season upon us and with so many things to do, I am trying to streamline some of my favorite recipes. So how better to celebrate Fish Friday than with this awesome Sheet Pan Shrimp Scampi? I tossed shrimp with lots of garlic, shallots, butter, olive oil, red pepper, and a splash of dry vermouth. After a few minutes in a hot oven, I added freshly squeezed lemon juice and a sprinkling of fresh parsley. This meal was so delicious, easy, and perfect for entertaining.
Ingredients for Sheet Pan Shrimp Scampi:
2 pounds shrimp -I used 21-25 per pound
7 cloves garlic, minced
7 tablespoons olive oil
5 tablespoons butter, melted and cooled
3 tablespoons vermouth
2-3 shallots, minced
1/3 cup chopped parsley
1/8 - 1/4 teaspoon crushed red pepper
1/2 teaspoon kosher salt
1/2 teaspoon black pepper
2 tablespoon fresh lemon juice
Time-Saving Tip: Chop the parsley, shallots, and garlic an hour before using.

We're ready to cook.
Toss the shrimp with all of the ingredients except for the parsley and lemon juice.
Place the shrimp mixture on a sheet pan. Transfer the pan to a 450-degree heated oven. Bake 3-4 minutes until shrimp just turns pink. The shrimp will continue cooking when you take it out if the oven. Remove from the oven and add the parsley and lemon juice. Serve with lots of bread for dipping in the pan juices.
It's ready! Sheet Pan Shrimp Scampi is totally delicious! I love serving it with great bread for dipping but a side of pasta or even some mashed potatoes would work well. This dish is also perfect to multiply for a large group but be sure to use another pan.
