Sausages with Grapes

It's hard to believe that so few simple ingredients can result in the most delicious and satisfying meal. Italian sausages are sauteed in a pan and later joined by a few handfuls of grapes and finished with a splash of balsamic vinegar. Serve with some crusty bread and if you're anything like me, this will becomes your new favorite meal.


Sausage with Grapes:


2 pounds Italian sausage, I used a mixture of hot and sweet

1/2 tablespoon olive oil

4 cups mixed red and green grapes, try to get the firmest grapes that you can find

a few sprigs of fresh thyme

1-2 sprigs of fresh rosemary

3 tablespoons balsamic vinegar

kosher salt

black pepper


Time-Saving Tip: The grapes can be rinsed and dried earlier in the day.


Let's see what we need.

We're ready to cook.


Preheat the oven to 450-degrees. Heat 1/2 tablespoon of oil in a large pan. Add the sausage and saute until browned. Once browned use a fork and poke each sausage a couple of times so some of the fat can drain. Transfer the sausages to a plate. Discard all but 1 tablespoon of fat from the pan.


Add all of the grapes and herbs to the pan; season with salt and pepper. Cook over medium-high heat while stirring. Once some of the grapes start darkening and softening return the sausages and juice to the pan. Place the pan in the oven. Roast until the grapes have softened a bit more and the sausages are cooked through. This can take 20-25 minutes. Remove the pan from the oven and toss in the balsamic vinegar.


It's ready! This is truly such a delicious meal. This is perfect for a family dinner and easily multiplied for entertaining. If you've never tried this combination before-now is the time.
