Many of you who visit me here know I'm quite a fan of sausage and peppers. I make all different versions of it and incorporate the flavor into my cooking whenever I can. So it was just a matter of time before I made Sausage and Peppers Tacos. I don't know what took me so long because these were delicious. I combine hot Italian sausages with ground beef and a few seasoning. I filled toasted corn tortillas with sauteed peppers and onions for the most delightful treat. I decided that no sauce was needed but instead a sprinkling of cheese. My first taste revealed spice, flavor, and sweet vegetables. It was so delicious that my family declared this one of the best tacos ever. So with a four thumbs up rating from my house to yours, it doesn't get any better.
Ingredients for Sausage and Peppers Tacos:
Meat Filling:
1 1/2 pounds hot Italian Sausages, casings removed
1 pound ground beef
olive oil
5 cloves garlic, minced
1 1/4 teaspoons dried oregano
1 teaspoon kosher salt
1 teaspoon smoked paprika
corn tortillas
1-2 cups shredded Italian mixed cheese
Peppers and Onions:
1-2 large onions, peeled, halved and sliced
3 bell peppers, halved, seeded and sliced
olive oil
1 clove of garlic, minced
1/2 teaspoon dried oregano
kosher salt
black pepper
Time-Saving Tip: Prepare the meat filling a day in advance and heat before serving.
Let's see what we need.
We're ready to cook.
Heat one tablespoon of oil in a nonstick pan, add the sausage and beef. Top with all of the seasonings and saute until the meat is no longer pink. Break up the sausage with a wooden spoon while stirring.
Pour two tablespoons of oil into a non-stick pan and add the onions. Sautee for 2-3 minutes until they start to soften. Add the peppers, oregano, and season with salt and pepper. Cook another 2 minutes until the peppers begin to soften but remain slightly firm.
I like to heat and char up the tortillas before filling them. It makes such a difference in taste and texture. I do this by holding it over the flame on my stove. If you do not have a gas stove, you can heat the tortillas in the oven. Just wrap them in foil. Now you're ready to build your tacos.
They're ready! Sausage and Peppers Tacos are crazy delicious and a fun twist to an old favorite. I prepared the meat mixture a day in advance, which means this is a great make-ahead dish for Taco Tuesday.
