Salmon Salad Sandwich


This Salmon Salad is loaded with vegetables and flavor. It starts with canned salmon and it's gussied up from there. I have been making this salad for at least twenty years. I have served it to family, friends and often keep some in the refrigerator for a quick lunch. It's great on any kind of bread, rolls and I even love it on rice cakes. Give it a try and I bet you will love it, too.


Ingredients for Salmon Salad Sandwich:


4 6 ounce cans canned salmon

1 cup mayonnaise

1/3 cup chopped carrots

1/3 cup chopped celery

1/3 chopped red onion

1/3 cup chopped parsley

4 scallions thinly sliced

2 tablespoons fresh lemon juice

1/8 teaspoon salt

1/8 teaspoon pepper


Time-Saving Tips: All of the vegetable prep can be done in advance. The entire salad can be made in advance and kept in the refrigerator for a couple of days.

Now let's make the salad.



Open all of the cans of salmon and drain them very well. Add the celery, carrots, red onion, parsley, and scallions in a medium bowl.


Once the vegetables and salmon are combined add the lemon juice, salt, pepper, and mayonnaise.
