2 Sweet Dumpling Squash
2 tablespoons olive oil
2 tablespoons brown sugar
1/4 teaspoon cinnamon
1/4 teaspoon Kosher salt
1/8 teaspoon black pepper
2 pinches nutmeg
a pinch or 2 of cayenne pepper

Preheat the oven to 425-degrees. Be sure to wash the squash very well because the skin is edible. Then cut the squash in half and scoop out the seeds. Then slice each half into 1/4" - 1/2" slices. Just try and cut them all the same size so they cook at the same rate.
Place the squash in a bowl. Add the rest of the ingredients and toss. Then place on a parchment paper lined cookie sheet. Roast for about 20 minutes and then turn all of the pieces over. Bake another 10-15 minutes until tender. The timing depends on how thick the slices have been cut.
