Roasted Kabocha Squash

Easy, delicious and good for you...this sounds like the perfect side to me. Kabocha squash is sliced, seasoned, and roasted. The result is beautifully tender and creamy slices of goodness. This is simple enough to add to any weeknight meal and delicious enough when entertaining. This is also perfect to add to a table of holiday offerings thanks to the ease of preparation and that the squash goes with any kind of roast.


Ingredients for Roasted Kabocha Squash:


1 large Kabocha Squash

2 tablespoons melted butter

2 tablespoons brown sugar

Kosher salt

black pepper


Time-Saving Tip: The squash can be prepped in advance so it is ready to go in the oven when you are ready.


Let's see what we need:


Let's cook.


Preheat the oven to 450-degrees.

Wash and dry the squash. Carefully cut the squash and half. Scoop out all of the seeds. Cut each half into 8 equal pieces.


Place the squash on a parchment lined sheet pan. Brush the side facing you with half of the butter and sprinkle with half of the sugar. Season with salt and pepper.


Bake the squash for 15 minutes. Turn all of the pieces over and coat with the remaining butter and sugar. Season with salt and pepper and return to the oven. Roast another 15 minutes or until tender.


It's ready! This looks great and tastes even better. It is the perfect side.
