Rice Cooker Cardamom-Turmeric Rice


I always love using my rice cooker. It's a pleasure to have a mostly hands free side dish cooking while I'm doing other things. With just a few additions, ordinary plain white rice can be spruced up to be extraordinary. Rice Cooker Cardamon-Turmeric Rice is the perfect example. With only a few ingredients, I have a side dish that will go great with any chicken, fish, or pork dish. Give it a try, and you' will love it.


Ingredients for Rice Cooker Cardamon-Turmeric Rice:


2 cups Basmati rice, rinsed until water runs clear

water

5 cardamom pods

3/4 teaspoon turmeric

3/4 cup golden raisins

1 lemon, zested

1 tablespoon chopped cilantro

3/4 kosher salt

1/4 black pepper


When using a rice cooker always use the measuring cup and spatula that comes with the cooker.


Time-Saving Tip: The rice can be cooked a few hours in advance and kept on the warm setting. Add the rest of the ingredients right before serving.

Now, back to cooking.

Add the rinsed rice to the cooker and add enough water, so the liquid measures two cups. My rice cooker has different measures for different types of rice. The step on the far right is white rice. Then add the cardamom pods and the turmeric.


Once cooked fluff with the spatula and fold in the lemon zest, raisins, and season with salt and pepper; close the lid for 5 minutes and keep on warm. Open the cover and fold in the cilantro.


It's ready! It's so delicious. Since the rice cooker does most of the work, it frees you up to do other things, give this a try, and I know you'll love it.
