Pumpkin Spice Chia Pudding


This Pumpkin Spice Chia Pudding is so delicious that it can be equally as good to have for breakfast, a snack or even dessert. The combination of pumpkin and spice once again proves to be irresistible. This pudding topped with fruit and nuts is the perfect way to start off any day. My husband says it tastes like breakfast pumpkin pie. Once you try it I am sure this will become a regular in your home.


Ingredients for Pumpkin Spice Chia Pudding:

serves 3


1/2 cup chia seeds

2 cups coconut milk

water

1/2 cup pumpkin puree

1 teaspoon vanilla

1/2 teaspoon pumpkin pie spice

4 tablespoons of pure maple syrup plus more for serving

2 bananas, diced

handful of pecans, coarsely chopped


mason jars or other containers


Time-Saving Tip: This chia pudding is made in advance so you can wake up to pudding waiting for you. If you want, you can coarsely chop the pecans and they will be ready when you are.


The chia pudding needs to rest before eating. It gives the chia seeds a chance to soak up all of the goodness. Plan on making it the night before breakfast or at least eight hours before enjoying.


Let's see what we need.



Now we can make the chia pudding.


Measure the 1 - 13.5 ounce can of coconut milk to measure 2 cups. You will see that it is a bit short. Add enough water to the measuring cup to reach 2 cups of liquid. Whisk together the coconut milk, pumpkin, vanilla and maple syrup in a bowl until well blended. Add the pumpkin spice and whisk again. Then finally add the chia seeds. Combine well.


Evenly divide the chia pudding into the mason jars. I like to put them in mason jars because it makes it easier to grab and go. Refrigerate overnight or for at least eight hours.



When you are ready to serve the chia pudding garnish with the diced bananas and pecans.



Now drizzle 1/2 teaspoon of maple syrup over the topping in each jar.


The Pumpkin Spice Chia Pudding is ready! They are so yummy. I just ate one and I am thinking about when I will eat another one. Give it a try and I know you will love it, too.
