Nutty Banana Bread



It happened again, too many bananas and not enough time. I always have a bunch of bananas in the house, and I try to get all different levels of ripeness, so there is always one that is just right for munching. But every once in a while, I look at my fruit bowl, and they all look the same. They look exhausted and worn out, and I know there is only one thing for me to do, make banana bread. I think I've mentioned that my family is conflicted on what makes the perfect bread. Ethan likes walnuts, and Steven loves chocolate chips, my husband and I are equally divided. So depending on which son is home while I'm baking is how I roll.


Ingredients for Nutty Banana Bread:


2 1/2 cups flour

1 1/2 cups mashed bananas

1 cup walnut pieces

1/2 cup unsalted butter, room temperature

1/3 cup brown sugar

1/2 cup honey

1/4 cup whole milk

2 eggs

2 teaspoons vanilla

2 teaspoons baking powder

1 teaspoon cinnamon

1/2 teaspoon baking soda

1/2 teaspoon nutmeg

1 tablespoon of raw sugar

Cooking spray


You will also need a 9 x 5 loaf pan.


Time-Saving Tip: Bake, cool, and wrap bread in plastic wrap and serve the next day.

Combine the flour, baking soda, baking powder, cinnamon, nutmeg, and salt; set aside.


Beat the butter, sugar, and vanilla until combined; add the honey.


Add the bananas, milk, eggs, and beat until combined. Stir in the flour mixture and the the nuts.


Coat a loaf pan with cooking spray and then transfer the batter to the pan. Sprinkle with the raw sugar. Back the loaf in a preheated 350-degree oven until done about 45- 50 minutes.


It's ready! Nutty Banana Bread is delicious and a perfect way to use up some of those pesky overripe bananas. I love a slice with my morning corning and the rest of my family snack on it all day until it's gone. And don't worry, you can swap out the nuts for chocolate chips.
