2-4 cups leftover diced turkey
3 tablespoons olive oil
3 carrots, peeled, halved lengthwise and sliced
3 stalks celery, sliced
1 small onion, diced
2 leeks, cleaned, halved and sliced
1 1/2 tablespoons lemon juice
1/4 chopped fresh parsley for garnish
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
