The only thing better than my Grilled Lemon-Herb Chicken is the leftovers the next day. The chicken is excellent in sandwiches, but I particularly love the chicken in a salad. I like to top lettuce with sliced chicken and add some of my favorite ingredients, like chickpeas, feta cheese, and spicy peppers. I then drizzle the salad with olive oil and balsamic vinegar and dig in.
Ingredients for Next-Day Grilled Lemon-Herb Chicken Salad:

1 piece leftover Grilled Lemon-Herb Chicken, sliced
1 baby head of romaine, slice
2 Compari tomatoes, quartered
3 pepperoncini
2 grape leaves
1/2 cup canned chickpeas, rinsed and drained
1/2 cup diced cucumber
1/4 cup crumbled feta cheese
1 tablespoon chopped parsley
optional: diced red onion
extra virgin olive oil
balsamic vinegar
kosher salt
pepper
