Ingredients for Miracle Noodles with Shrimp and Vegetables:
serves 4
*2 - 7 ounce packages of Miracle Noodle Fettuccini, rinsed well, drained and dried
1 pound uncooked shrimp, shelled
2 cups sliced mushrooms
1 6.3 package of baby bok choy
4 scallions, sliced
1/2 cup thinly sliced carrots
2 cups snap peas
1/2 red pepper cut into strips
1 cup sliced baby corn
3 cloves minced garlic
1 tablespoon chopped ginger
Kosher salt
black pepper
grapeseed oil
Combine the following ingredients for the sauce:
1 tablespoon plum sauce
2 tablespoons low sodium tamari sauce
2 tablespoons +2 teaspoons rice wine vinegar
1 teaspoon sesame oil
1/2 teaspoon Sriracha sauce
1/4 cup chicken broth
Time-Saving Tips: You can prep all of the vegetables ahead of time. The noodles can also be rinsed and dried an hour or so ahead of time as well.

Now we can cook.
These noodles need to be rinsed a few times. They have a bit of a smell and I imagine taste that you really want to rinse away. I promise once you do this that will be a blank canvas for you. After you rinse and drain the noodle dry them off a bit with paper towels. Set aside.
Add a few teaspoons of oil to a hot pan. Add the carrots and snap peas and saute for a minute. Then add the bok choy and the mushrooms and saute another minute.
Then push aside the vegetables and add the shrimp. Season the shrimp with salt and pepper. Continue sauteeing over high heat for a couple of minutes just until the shrimp just turn pink. Then add the corn, red pepper, garlic, and ginger. Toss to combine.
Add the noodle and toss a few times. Add half of the sauce and toss then add the rest of the sauce as needed.
It's ready! Doesn't it look delicious? The combinations of the vegetables, seasonings, sauce with the noodles is really awesome. And I will say these noodles are a miracle. Give it a try, I bet you will love them.
