Mini-Meatloaf and Cauliflower Sheet Pan Dinner

Everyone's comfort food is now an easy sheet pan dinner. Mini meatloaves and cauliflower make a delicious all in one meal for a family of four. These meaty loaves are filled with flavorful bell pepper, onion and thyme and the cauliflower are seasoned with sweet and smoked paprika. The meal comes together quickly and is so good. Give this a try and I'm sure this will become a regular at your house.


Ingredients for Mini-Meatloaf and Cauliflower Sheet Pan Dinner:

serves 4


meatloaf:

1 pound chopped beef

1/2 cup panko

1 teaspoon Worcestershire Sauce

1 large egg, lightly beaten

1/8 teaspoon dried thyme

1 tablespoon chopped parsley

1 teaspoon olive oil

1 tablespoon chopped orange, yellow or red bell pepper

1 clove garlic, minced

2 tablespoons finely chopped onion

1/2 teaspoon Kosher salt

1/4 teaspoon black pepper

1/3 cup ketchup plus 4 teaspoons


cauliflower:

1 head cauliflower, cut in 1 1/2" florets

1 tablespoon olive oil

3/4 teaspoon Kosher salt

1/4 teaspoon paprika

1/4 teaspoon smoked paprika


Time-Saving Tips: You can cut up all of the vegetables for the meatloaf and the cauliflower earlier in the day.

Let's see what we need.


Now let's cook.


Season and toss the cauliflower with the Kosher salt, paprika, smoked paprika, and olive oil. Set aside.


Preheat the oven to 425 - degrees. In a small pan add the teaspoon of oil, chopped pepper, and chopped onion. Saute for 5 minutes. Do not brown. Add the garlic an stir until fragrant. Cool for a few minutes. Once the mixture has cooled combine the meat, panko, Worcestershire sauce, egg, parsley, thyme, 1/3 cup ketchup, salt, and pepper.


Divide the meat mixture and make 4 loaves. They should be about 4 inches long. Place them on a parchment lined sheet pan. Add the cauliflower to the pan. Bake for 15 minutes. Remove the pan from the oven and spread one teaspoon of ketchup on top of each loaf. Return the pan to the oven and bake another ten minutes.
