Everyone loves Chocolate Covered Bananas. They're irresistible, so I thought that they would be perfect for this week's Kids In The Kitchen Series. They are fun and easy to make and so tasty. With a little help from you, the junior chefs roll halved chilled bananas in the warm chocolate and sprinkle each one with their favorite toppings. I rolled mine in chopped peanuts, but, mini chocolate chips, coconut, or granola would be great options, too. I bet your kids have more great ideas also. Then chill the bananas in the refrigerator or pop them in the freezer for a yummy snack. These are irresistibly delicious. I was so happy that my big kids loved them.
Ingredients for Chocolate Covered Bananas:
3 ripe bananas
1 cup chocolate chips
2 teaspoons coconut oil
1/2 cup of chopped peanuts, granola, coconut of mini chocolate chips
6 candy apple sticks

We're ready to cook.
Have your junior chefs break the bananas in half or help them cut each one. Then gently insert a stick into the middle of each banana; gently push the stick about 3/4's up the fruit. Place the fruit on a parchment-lined pan or large dish and refrigerate them for 30 minutes.
Next your cooks need to add the coconut oil to the chocolate chips and stir.
Transfer the chip mixture to the microwave and cook on high for 45 seconds; stir. Have your chefs return the chocolate to the microwave and cook for another 45 seconds. The mixture will still appear to have chips, but once stirred, it will be smooth and creamy.
I find it best to transfer the chocolate to a flat dish and then gently roll the bananas in the chocolate and sprinkle them with toppings of choice. Return the bananas to the parchment-lined pan and refrigerate or freeze for a few hours. The bananas are delicious when cold and equally as yummy when frozen.
