Jeweled Celery Salad


My husband, Brad, loves the subtle taste and crunch of celery, so I try to use it in my cooking whenever I can. I wanted to make something special and surprise him using this veggie and created Jeweled Celery Salad for him. This yummy salad tastes so good and looks so pretty. I started with celery and added parsley leaves, pomegranate seeds for a little sweetness, and Marcona almonds for something salty. I then finished it off with a squeeze of fresh lemon juice and extra virgin olive oil. I'm so happy I did because he loved it.


Ingredients for Celery Salad:


5 cups sliced celery, 1/4" pieces

1 cup parsley leaves

1/3 cup Marcona almonds, cut into thirds

1/4 cup pomegranate seeds

2 tablespoons shredded parmesan cheese

1 lemon, juiced

extra virgin olive oil

kosher salt

black pepper


Time-Saving Tip: Slice the celery a few hours in advance and keep refrigerated.

This salad comes together so quickly. Start by placing the celery in a large bowl and then mix in the parsley. Sprinkle with the pomegranate seed, almonds, and then cheese. Season the salad with salt and pepper and some; drizzle with lemon juice and olive oil to taste, and toss.
