Happy New Year! I hope everyone had a great holiday season. I always love to celebrate the first day of the New Year with a big pot of Black Eyed Peas, and this year I came up with an Instant Pot Version. I sauteed some turkey bacon, onions, celery, garlic, carrots, and bell pepper. After a bit of sauteeing, I added some seasoning and broth. I let the pot do its thing, and before we knew it, we had the most delicious pot of beans. My family loved them, and now we're ready for the new year!
Ingredients for Instant Pot Black Eyed Peas:
1 bag dried black-eyed peas
6 ounces turkey bacon, diced
1 cup diced red bell pepper
1 medium-sized white onion, diced
4 cloves garlic, minced
1/2 cup diced carrots
1/2 cup diced celery
4 cups chicken broth
3-4 sprigs of fresh thyme
1 1/4 teaspoons kosher salt
3/4 teaspoon black pepper
1 teaspoon adobo (optional, but it adds great flavor)
Time-Saving Tip: Prepare the beans in advance, cool and refrigerate. Gently reheat before serving.

Set the Instant Pot for 30 minutes on saute. Once heated, add the oil and bacon; stir. Add the celery, bell pepper, onion, carrots, and garlic; saute for 5 minutes. Stir in the salt, pepper, and adobo. They were followed by the black-eyed peas, broth, and thyme.
Close the lid and set the Instant Pot to 42 minutes on HGH. Once cooked, let the pot naturally release.
Remove the lid and stir the peas. I like to serve them with a side of white rice and greens.
