Ingredients for Holiday Persimmon-Pomegranate Salad:
5 ounces butter lettuce
2 persimmons, peeled and sliced
2 ounces pomegranate seeds
1/2 cup crumbled blue cheese
1/2 cup pistachios
extra virgin olive oil
balsamic vinegar
kosher salt
black pepper
Time-Saving Tips: assemble the salad up to an hour before serving; dress when serving.

Hi Kev, thank you so much! Wow, I would have love getting that box filled with persimmons and pomegranates. I usually bake with persimmons but decided to go a different route. Turns out they're awesome in salads, both delicious and pretty. :)
Oh V., your salad idea here is stunning! A few years back I had a friend from out in Cali who sent a box of persimmons & pomegranates a couple times, but I hadn't any idea what to do w/ them! If only I'd seen this salad then... :-)
