We've had a few days of great weather so I decided to take advantage of the sun and do a little grilling. So off to the market I went and I came home with lamb, fresh mint, strawberries, and cucumbers. I marinated the lamb for a short time in a mixture of olive oil, rosemary, and garlic. I wanted something minty yet fresh tasting to serve alongside the chops so I created this delicious chutney. The unexpected combination of strawberries, cucumbers, and mint complemented the lamb perfectly. This is a great special occasion meal to celebrate with family and friends.
Ingredients for Grilled Lamb Chops with Strawberry-Mint Chutney:
Lamb:
2 racks of lambs, cut into chops
3 tablespoons olive oil
4 cloves garlic, chopped
1 tablespoon Dijon mustard
1/2 teaspoon dried rosemary
1/2 teaspoon black pepper
Strawberry-Mint Chutney:
1 1/2 cups chopped strawberries
1 cup peeled and seeded chopped English cucumber
4 tablespoons chopped fresh mint
3 tablespoons chopped shallots
2 tablespoons red wine vinegar
1 tablespoon extra virgin olive oil
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
Time-Saving Tips: The lamb can be cut into chops earlier in the day.
Let's see what we need.
We're ready to cook.
Place the chops in a glass baking dish. Add the garlic, 1 tablespoon of mustard, olive oil, rosemary and 1/2 teaspoon of black pepper; combine well. Cover and refrigerate for an hour.
While the meat is marinating combine all of the chutney ingredients together in a bowl and set aside.
Preheat the grill to medium-high heat. Cook the chops a couple of minutes on each side until the desired doneness. If you touch the meat with your finger the softer it feels the rarer the meat will be...so if it feels firm the meat is well cooked.
It's ready! I can't begin to describe to you just how delicious the lamb and chutney taste together. The flavorful lamb along with the coolness of the strawberries, the crunch of the cucumbers, and the brightness of the mint go together so well. Give it a try and I know you'll agree.
