Whenever Chicken Fajitas are on the menu you know it's going to be a good time. They're delicious and you're guests get to join in on the fun and make their own. This grilled version comes together so easily you'll be amazed. The chicken is quickly tossed with seasonings and marinate for as long as it takes you to cut up the vegetables. Then everything goes on the grill and within minutes dinner is ready. Serve with flour tortillas, sour cream, guacamole, and a pitcher of sangria and you have yourself a party!
Ingredients for Chicken Fajitas for a Crowd:
serves 8 - 12
Chicken:
3 1/2 - 4 pounds thin chicken cutlets
1/2 grapeseed oil
4 limes, zested
1 1/2 teaspoon smoked paprika
1 teaspoon kosher salt
1 teaspoon oregano
1 teaspoon chipotle chili pepper
1/2 teaspoon black pepper
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
Vegetables:
4 bell peppers, halved and seeded
3 red onions, thickly sliced
kosher salt
black pepper
grapeseed oil
Serve with flour tortillas, sour cream, and guacamole.

Combine the chicken and the rub ingredients together in a pyrex; set aside.
Brush the vegetables and lightly with oil; season with salt and pepper.
Once the chicken and vegetables are prepared preheat the grill. Once the grill is about 400-450 degrees place the chicken and vegetables on the grill. After a couple of minutes, the chicken should have nice grill marks and are ready to turn over. Cook a couple of minutes until they are done. Turn the vegetables when the edges are just starting to brown and then grill an additional 2 minutes. Ideally, the vegetables are still firm when you remove them from the grill.
