Green Eggs and Ham

Happy St. Patrick's Day! Let's face it; it's hard to resist eating green food today. So I'm starting my day off right with my deliciously -healthy Green Eggs and Ham. I combined egg whites and a few spoonfuls of my Healthy Green Food Coloring for the perfect shade of green. Ingredients for Green Eggs and Ham:


1/2 cup egg whites or 4 egg whites

Uncured Irish Loin Bacon

kosher salt

black pepper

cooking spray


Time-Saving Tip: Prepare the Food Coloring in advance.


Let's see what we need.

We're ready to cook.




Coat a non-stick pan with cooking spray. Add the ham or as I have Irish loin Pork Back. Gently heat turning once.








Whisk a half cup of whites in a bowl until foamy. Add 2-3 teaspoons of the green food coloring and whisk a bit more. The whites can still have a little liquid in the bottom of the bowl.

Coat the pan with more spray and add the egg whites. Cook over low-medium heat folding with a spatula. Once they appear cooked, they are ready.


They're ready! Green Eggs and Ham are the perfect way to start off the day. Each bite of fluffy egg whites taste like spinach.
