I make a lot of cucumber salads during grilling season. They always come together quickly and are so versatile. In this version, I had feta on my mind so I added it to the cukes along with dill, red onion, and tossed it with a lemony dressing. It resulted in a bright and refreshing salad which is the perfect side to grilled chicken, lamb, salmon, or anything else. Give this a try and I'm sure you'll be making this often.
Ingredients for Greek Cucumber Salad:
Salad:
3 English Cucumbers, peeled, halved and seeded
1/2 red onion, thinly sliced
2/3 cup crumbled feta cheese
3 tablespoons coarsely chopped dill
Dressing:
2 tablespoons extra virgin olive oil
6 teaspoons lemon juice
3 teaspoons white vinegar
1/4 teaspoon Dijon mustard
1/2 teaspoon salt
Time-Saving Tip: The cucumbers and onion can be prepped a few hours before combining with the dressing.

Combine the dressing ingredients and set aside.
Peel and halve the cucumbers; using a spoon remove the seeds. Cut the cucumbers into 1/4" slices.
Combine the cucumbers, dill, onions, and dressing. Once mixed well fold in the cheese and adjust the seasonings.
It's ready! It looks so great and is really delicious. It's the perfect side for so many dishes and is easily multiplied for a crowd. This is one of my favorite salads.
