Friday Night Chicken


Friday Night Chicken is perfect for weeknight cooking. It's so easy to make and rewards you with great flavor. This juicy chicken seasoned with lemon and Herbes De Provence is easy enough to put together at the end of a busy day. It goes with just about any side dish, can be prepared in advance, and is worthy of entertaining. Give it a try and I know this will become a family favorite.


Ingredients for Friday Night Chicken:

serves 2-4


4 bone-in chicken thighs

2 tablespoons olive oil

1 teaspoon Herbes De Provence

zest of 1 lemon

1 large clove garlic, minced

1/2 teaspoon Kosher salt

1/4 teaspoon black pepper


Time-Saving Tip: I like to use a disposable baking pan for this recipe since it makes clean-up a breeze.

Preheat the oven to 450-degrees.

In a small bowl combine the Herbes De Provence, lemon zest, olive oil, garlic, salt, and pepper. Rub it all over the chicken, including under the skin. Put chicken in a baking pan. Roast for about 30-40 minutes depending on the size of the chicken thighs.
