Remember a few weeks ago when I made mouth-watering "Just Pork? " It was delicious when sliced and enjoyed, but it's also perfect for so many different dishes. So when I was debating what to make for lunch one day, I had a great idea. So I diced some of the meat and added it to flour tortilla shells lined with lots of yummy cheese, added some sliced pickled jalapenos and scallions, and cooked them over high heat. My family could hardly wait for fo me to cut them up before everyone tasted these tasty morsels. These were so deliciously flavorful that we quickly declared them Favorite Pork Quesadillas thanks to the delicious meat and toppings.
Ingredients for Favorite Pork Quesadillas:
2-4 cups diced Just Pork
4 cups grated cheddar cheese or Monterey Jack or a combination
about 1 cup sliced scallions
2 cups drained pickled jalapenos.
small flour tortilla shells
Serve with tomato salsa
This is one of those recipes that is more of a method, with the suggested ingredients. Feel free to make as many quesadillas as you would like depending on how much leftover pork you have.
