Favorite Barbecue Chicken

I decided to sneak in a little more grilling before totally dedicating myself to all things pumpkin. And what could be more delicious than Favorite Barbecued Chicken? I coated the chicken with a mixture of lime juice, dried herbs, and spices, including a healthy dash of smoked paprika. After a little time marinating and a little time at the grill, I enjoyed the juiciest and most flavorful chicken. I only wish I made more so I could enjoy leftovers all week long!


Ingredients for Favorite Barbecue Chicken:


3 pounds bone-in chicken parts, I used thighs and drumsticks

1 medium onion, peeled and quartered

4 garlic cloves

3 tablespoons olive oil

3 tablespoons lime juice

2 teaspoons kosher salt

1 1/2 teaspoons smoked paprika

1 teaspoon sweet paprika

1 teaspoon black pepper

3/4 teaspoon cumin

1/2 teaspoon dried oregano

1/2 teaspoon cayenne pepper


Time-Saving Tip: Prepare the marinade in advance.

We're ready to cook.



Place all ingredients except for the chicken in a blender or food processor. Blend until smooth. You might have to stop in between and give the mixture a quick stir to get things moving.


Place the chicken in a glass baking dish and thoroughly coat the chicken on both sides. Cover with plastic wrap and refrigerate for 2 hours.


Shake off the excess marinade and transfer the chicken to a preheated medium-high grill. Cook until the bottom of the piece have grill marks and are golden. Turn the pieces over and continue cooking until done, turning as needed for even color. Depending on the size of the pieces, this will about take 20-25 minutes.


It's ready! After one bite you will know why I call this Favorite Barbecue Chicken. So hold on to summer just a bit longer and make some chicken for tonight's dinner. I served this with deliciously sweet homegrown tomatoes.
