Double Mushroom Orzo Risotto


Orzo, cheese, and two kinds of mushrooms make a delicious and quick risotto. This comes together so easily and makes a great side to any roast, fish, or grilled food. Perfect for any weeknight or dinner party it is always a favorite.


Ingredients for Double Mushroom Orzo Risotto:

serves 4


1 cup orzo

8 ounces white mushrooms, caps sliced and stems saved for another use

1/3 cup dried porcini mushrooms

3 tablespoons butter

t teaspoon olive oil

2 big shallots, chopped (about 3/4 cup)

2 cloves garlic, minced

2 1/2 cups low sodium chicken broth

1/2 cup reserved mushroom liquid

5 tablespoons Parmesan cheese

1/4 teaspoon nutmeg

Kosher salt

black pepper


Time-Saving Tip: The shallots and mushrooms can be chopped in advance.

Soak the dried mushrooms in a cup of very hot tap water until tender. Once tender, reserve a half cup of mushroom water, and chop the mushrooms. Set aside.


Heat 1 teaspoon of olive oil over medium heat. Add the sliced fresh mushrooms and season with salt and pepper. Cook without stirring for 1-2 minutes until the mushrooms are sizzling and starting to dry out. Stir and cook without stirring for another 1-2 minutes. Give the mushrooms another stir. Continue cooking another couple of minutes, occasionally stirring. As the liquid start to leave the mushrooms some will start to turn lightly golden. Once this happens they are ready. Set aside.


Melt the butter in a medium-sized saucepan. Add the shallots and saute for about 4 minutes until tender. Do not brown. Add the garlic and continue cooking until fragrant - around 30 seconds. Add the orzo and saute for another 5 minutes. Then add the chicken broth and reserved mushroom liquid and give the mixture a stir.


Stirring occasionally, simmer the orzo for about 10-15 minutes until it is creamy and tender. Stir in the chopped dried mushrooms and then add the sliced mushrooms. Continue cooking for a minute or two. Turn off the heat and add the cheese and nutmeg. Add salt and pepper if needed.
