Deconstucted Wedge Salad with Apple

This deconstructed wedge salad combines all the deliciousness of a wedge in one bowl. We changed it up a bit and added some sliced crisp apples to the mix. Serve this as a light meal with crispy bread or as a side and you will be glad that you did!

Ingredients for Deconstructed Wedge Salad with Apples:

serves 4-6

9 ounces romaine hearts

*3 pieces bacon, cooked until crispy

1 cup assorted cherry tomatoes, halved

1/4 cup diced red onion

1/3 (generous) cup crumbled blue cheese

1/2 honey crisp apple, thinly sliced

Kosher salt

Coarse black pepper

Cranberry Walk Vinaigrette (click HERE for the recipe)

Time Saving Tip: You can cook the bacon earlier in the day so it is ready. The vinaigrette can also be prepared in advance.

* My favorite way to cook bacon is in the oven. I place the slices in a glass baking dish and bake in a preheated 400 degree oven until done.

Let's see what we need:

Let's make our salad.

I wanted you to see how generous I was when measuring some of my ingredients. Also, you can see the crispness of the bacon and how thinly I sliced the apple.

In a large bowl add all of the ingredients. Starting with the romaine lettuce followed by the rest of the ingredients. When you are ready to serve the salad make sure the vinaigrette is well stirred and add as much as you would like. Start slow when adding... you can always add more. Season with salt and pepper.

It's ready! This salad is delicious. You will love the addition of the apple to all of these flavors.

Enjoy!
