The addition of chipotle peppers and lime juice is an unexpected twist to a summer favorite. This coleslaw is the perfect side to burgers, ribs, chicken and even grilled fish. Once you try it you'll be wondering where its been all your life.
Ingredients for Coleslaw with Chipotle Peppers:
1- 14 oz. bag of Coleslaw mix
1 tablespoon chopped green onions
3/4 cup mayonaise
2-3 teaspoons chopped chipotle peppers in adobo sauce
5 tablespoons of lime juice
1 teaspoon grated lime peel
1/4 cup cilantro (see note)
Kosher salt
Time Saving Tip: The lime can be juiced and the peel grated and stored in the refrigerator until you are ready to prepare the coleslaw. Also, the coleslaw can be made in advance and stored in the refrigerator.
Note: If you are not a fan of cilantro you can use parsley instead.

Let's start making the coleslaw.
First make the dressing. Combine the mayonnaise, lime juice, grated lime peel and chopped chipotle peppers in adobo sauce. Set aside.
Pour coleslaw mix into a medium sized bowl. Pour the dressing on top and fold the mixture together until combined.
Once dressing in is fully incorporated into the cabbage, fold in the cilantro and chopped scallions.
Your coleslaw is ready! It's a great addition to any barbecue and perfect to bring for a potluck.
