Chili Baked Potatoes

I love having a few easy and delicious weeknight meals planned for the week. And Chili Baked Potatoes are perfect for those busy nights. I bake up some great potatoes until tender and fill them with some leftover chili from another dinner or even some that I have tucked away in the freezer. I served this luscious potato with Game Day Turkey Chili, and I finished it off with some of my favorite toppings. These are so yummy, and the whole family will have fun building their potato.


Ingredients for Chili Baked Potatoes:

4 large Idaho or Russet Potatoes

about 2-3 cups leftover Game Day Turkey Chili; any chili will do

Serve with sour cream, diced red onions, green onion, cheddar cheese, avocado

This recipe isn't as much of a recipe as it is a guide. Feel free to use any chili, potatoes, or toppings of your choice.

Get ready to make the easiest dinner ever! Bake the potatoes until tender. If you're short on time, feel free to use the microwave. The skin won't be as crisp, but it will still be good. Once nice and tender, cut the top of the potato and squeeze it a bit, and fluff with a fork. Add the chili and your favorite toppings.



They're ready! Chili Baked Potatoes are the best. I admit that I can eat chili any night of the week but these potatoes really make chili leftovers a game-changer. Adults and kids love this meal.
