I was in the mood for something sweet, so I went shopping in my pantry. I found a few cans of tart cherries and decided to make a crisp. I combined the cherries with a little vanilla, sugar, cinnamon, and flour and topped it with a mixture of oatmeal, brown sugar, and a few other goodies. I baked the Cherry Fruit Crisp until golden and bubbly and was thrilled with the outcome. A perfect fruity and not too sweet dessert, thanks to my pantry find.
Ingredients for Cherry Fruit Crisp:
Filling:
5 cups of canned cherries, drained and liquid reserved for another use
4 tablespoons of flour
3 tablespoons of sugar
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
Topping:
3/4 cup old fashioned oats
3/4 teaspoon cinnamon
1/4 cup brown sugar
1/4 cup slivered almonds
pinch of salt
Time-Saving Tip: Prepare the topping up to a few hours in advance and bring to room temperature before baking.

Combine all of the topping ingredients except for the butter. Then using your fingers or a fork, combine the butter and set aside.
Set a strainer over a bowl and pour the cans of cherries over. Save the cherry juice for smoothies or to add to drinks.
Combine the dry ingredients for the filling.
Add the dry ingredients with the cherries and vanilla; transfer the mixture to a large pie dish or quiche dish.
Sprinkle the cherry filling with the topping. Bake in a preheated 375-degree oven for 30 minutes until bubbly and golden.
It's ready! Cherry Fruit Crisp is so delicious. I love it warm out of the oven topped with whipped cream and cinnamon. A scoop of ice cream would be a great topping as well. This crisp is the perfect dessert to make any time of year.
