What do you do when you have cauliflower in the refrigerator and feel like eating gooey cheese with no carbs? You make pizza, of course! Cauliflower Pizza is so good. I started by processing the veggie into fine pieces and popped it into the microwave. After the cauliflower was cooked, I mixed in a little cheese and popped it into the oven. Once golden, I topped it with more cheese and baked it until it was hot and melted. I was so happy about how good it tasted and even happier that this was carb-free.
Ingredients for Cauliflower Pizza:
1 head of cauliflower 1 3/4 pounds - 2 pounds
1/3 cup cheddar cheese
1/3 cup Parmesan cheese + 3 tablespoons
1 cup mozzarella cheese, divided
1 egg lightly beaten
6 tablespoons prepared pizza sauce
1/8 teaspoon black pepper
Time-Saving Tip: Process the cauliflower for up to a few hours before preparing the pizza.

We're ready to cook.
Line a sheet pan with parchment paper. Find a bowl that is 7 1/2 - 8 inches in circumference. Turn it over and trace two circles on the parchment paper. Turn the parchment paper over, so the pencil marks are on the bottom. You will be able to see the circles thru the paper.
Cut the cauliflower into florets and add to a food processor. Pulse until the veggie looks like rice.
Transfer the processed cauliflower to a pie plate—cover and microwave on high for 10 minutes. Once cooked, let cool enough to handle. Pour the cooked veggie into a few layers of paper towels and gently squeeze to release the excess liquid. The dryer, the better.
Transfer the cauliflower back to the dish. Mix in the egg, 1/3 cup Parmesan cheese, cheddar cheese, egg, and black pepper.
Evenly divide the mixture between the two circles and pat into pizza shapes.
Bake the rounds in a preheated 400-degree oven until golden. This will take about 35 minutes. Let the pizzas cool for at least 10 minutes and carefully transfer to a rack placed on top of a sheet pan.
Top each disc with the sauce, mozzarella then the Parmesan cheese. Return to the oven and bake until the cheese is melted.
