A BLT is hard to resist on any day but add some pesto mayonnaise and avocado and your favorite sandwich becomes irresistible. The smooth avocado in contrast to the crunchy bacon just tastes so good. This sandwich was extra special since I used the basil and tomatoes from our garden. Give it a try and I promise this will become a new favorite.
Ingredients for California BLT:
makes 3-4 sandwiches depending on the size of the bread slices
1 pound bacon
1 loaf of sour dough bread, sliced and toasted
lettuce
tomatoes, sliced
1 avocado, halved and sliced
Kosher salt
black pepper
1 cup of mayonnaise
3 tablespoons of pesto
Time-Saving Tip: You can make the pesto mayonnaise a day in advance and keep it in the refrigerator. You can even cook the bacon in advance. .Just undercook it slightly and when you are ready to use it carefully heat it up in the microwave.

Now we are ready to make our California BLT.
I like to roast the bacon in the oven. It is easy and not messy. Especially, using disposable pans. Place the bacon in the pans in a single layer. Place in a preheated 400-degree oven in the middle of the oven. It should take about 15-20 minutes to cook. Check every so often turning the bacon one time.
While the bacon is cooking it is a good time to prepare the pesto mayonnaise. Just combine the pesto and the mayonnaise and it is done.
The bacon is cooked perfectly. And no pans to clean. Yay!
To assemble the sandwich spread mayonnaise on both sides of the toasted bread. Then layer the bacon on one piece, followed by the lettuce, avocado, and th tomatoes. Season with salt and pepper.
And the California BLT is ready! They are so good. I couldn't make them fast enough before everyone started digging in. I know back in the day when I was still packing lunch for Ethan and Steven they would have loved to have found a few of these sandwiches in that old brown paper bag.
