I first shared this recipe a few years ago, at the start of spring, but it’s worth bringing back, especially now that we’re in the final week of summer vacation.
These luscious burgers are a treat any time of year but are perfect for these late-summer days. With the sun shining and temperatures still warm, barbecues are on my mind. I created these Burgers with Grilled Bermuda Onions and Horseradish Mustard. Imagine a perfectly grilled burger, topped with melted cheddar, sweet grilled red onions, a thick slice of ripe tomato, and finished with a luxurious horseradish mustard sauce. The flavors are a delightful combination, enhancing the others while letting the burger take center stage.
As we savor these last moments of summer, or even as we look ahead to more grilling in the fall, this recipe is a must-try. It’s the perfect way to enjoy the season’s best while treating yourself to a delicious burger.
Ingredients for Burgers with Grilled Bermuda Onions and Horseradish Mustard:
yields 8 burgers
2 1/2 pounds 85% lean ground beef
1 1/2 cups Dijon mustard
3 tablespoons prepared horseradish
1/2 teaspoon honey
kosher salt
black pepper
8 slices cheddar cheese
2-3 large tomatoes, sliced
lettuce
8 brioche buns
Tip-Saving Tip: Shape and refrigerate the burgers earlier in the day. Prepare the sauce in advance.

We're ready to cook.
Combine the mustard, honey, and horseradish; set aside.
Cut the onions in 1/4 " slices. Brush both sides with olive oil and season with salt and pepper. Transfer the onion slices to a heated grill and cook until the onions have great grill marks on both sides.
Shape the meat into eight equal-sized burgers; season both sides with salt and pepper.
Place the burgers on a heated grill. Flip when there are visible grill marks and continue cooking until the desired doneness. Remove from heat and immediately place a slice of cheese on top of each pattie. Remember that the burgers will continue cooking once they are removed from the heat.
