Ingredients for Bok Choy with Miso:
yields 4-6 servings
2 pounds bok choy
5 cloves garlic, minced
1 tablespoon + 2 teaspoons chopped ginger
4 tablespoons Mirin
2 tablespoons + 2 teaspoons water
4 teaspoons grapeseed oil
2 tablespoons white miso

In a small bowl, combine the mirin, water, and miso. Saute the garlic and ginger for 1-2 minutes in 2 teaspoons of oil. Add the miso mixture and cook for a minute; transfer to a bowl. Add another two teaspoons of oil to the pan and the bok choy. Saute until starting to wilt and add the miso mixture; cook for 1-2 minutes.
