Blackberry Mojito


When Friday night rolls around, I'm ready for a cocktail. While I like my drink to taste fancy, I want to prepare it with minimal effort. This Blackberry Mojito is perfect. In the glass, I muddle blackberries, lime juice, mint, and a little simple syrup together. I then pour in some rum, and a splash of seltzer and my drink is ready. It's that easy, equally delicious, and so refreshing during the hot summer. Cheers!


Ingredients for Blackberry Mojito:

2 drinks


16 blackberries

about 12 mint leaves

6-8 ounces of light rum

1 1/2 ounces simple syrup

1 large lime or 2 small ones

soda water


Simple Syrup:

1/2 cup granulated sugar

1/2 cup water


Time-Saving Tip: Prepare Simple Syrup up to a week in advance and keep refrigerated.

Combine the water and sugar. Microwave for a minute and then stir to dissolve. Cool the syrup before using.


Divide the berries and mint between two glasses. Add about 3/4 tablespoon of syrup in each glass and squeeze half a lime in each glass. I like to use the rubber handle of an ice cream scoop or wooden spoon to muddle the mixture until the berries have broken down. Pour in the rum, add some ice, and a splash of seltzer to each glass.


They're ready! Blackberry Mojitos are delicious and refreshing. And are the perfect light drink to keep you cool.
