My family is always in the mood for a great sandwich which means it needs to be full of flavor and textures. So when my friends over @afiafoods sent me a box of goodies, I zeroed in on the Garlic & Herb morsels and created Banh Mi with Falafel. This sandwich loaded with pickled and fresh vegetables, mushroom pate, spicy mayo, and topped with Garlic & Herb Falafel was a hit! Ingredients for Bahn Mi with Falafel:
1 bag Afia Garlic and Herb Falafel, baked according to package directions
Bahn Mi:
1 baguette, soft
Pickled Daikon Radish and Carrots
8 tablespoons Mushroom Pate
8 tablespoons Sriracha Mayo
4 leaves Baby Romaine lettuce
1/2 English Cucumber, peeled, seeded, and cut into strips
1/4 cup julienned scallions
1-2 jalapeno, thinly sliced
a small bunch of cilantro
Pickled Daikon Radish and Carrots:
2 cups julienned Daikon Radish ( 1/8 " thick)
2 cups julienned Carrots (1/8" thick)
1/2 cup distilled vinegar
1/2 cup sugar
1/4 cup warm water
1/2 teaspoon + 1/4 teaspoon kosher salt
Sriracha Mayo:
Combine-
1/2 cup mayonnaise
1 tablespoon Sriracha
Time-Saving Tip: Prepare the mushroom pate up to a few days in advance. You can also purchase mushroom pate as well as the Sriracha mayonnaise too. Prepare the vegetables earlier in the day.

To make the pickled vegetables whisk together the sugar, salt, vinegar, and water. Add the carrots and radish, and toss with the sugar mixture. Refrigerate at least 1 hour up to 24 hours before serving.
Have all of your veggies ready, the mayo prepared, and Afia Falafel cooked before you start building the Banh Mi. It makes the process easy and fun.
Cut the bread into 4 equal-sized pieces. Slice each in half-leaving the spine intact. Spread the top half of each piece with the mayo and the bottom half with the pate. Place a lettuce leaf on the spine of each of the sandwiches. Then add a generous amount of pickled vegetables, some cucumbers (not as much as the carrots and radish), and some cut scallions. Cover the scallions everything with a bunch of whole cilantro leaves, and then some thinly sliced jalapenos. Now top the filling with the falafel.
