These pies are irresistible. The combination of the apples, raspberries, sugar, and cinnamon gives them just the right amount of sweet and tart with delicate spice. And they are so easy to make using pre-made puff pastry. Delicious with morning coffee, an afternoon snack, dessert, and picnics these are perfect for any occasion.
Ingredients for Apple-Raspberry Hand Pies:
makes 9 pies
3 sheets of frozen puff pastry, this is 1 1/2 boxes
2 granny smith apples, peeled, cored, and diced
1 honey crisp apple, peeled, cored, and diced
6 ounces raspberries
3/4 cup granulated sugar
1/2 cup flour
3/4 teaspoon cinnamon
pinch of kosher salt
pinch of nutmeg
4 1/2 teaspoons raw sugar
1 egg + 5 teaspoons water, beaten
Time-Saving Tip: The pies can be made ahead and frozen prior to baking. This means you can have a slice of warm-freshly baked pie whenever your heart desires.
Let's see what we need.
We're ready to bake.
In a bowl, combine the diced apples, raspberries, granulated sugar, cinnamon, flour, salt, and nutmeg. Set aside.
Place a sheet of parchment paper on the counter. Unwrap 1 sheet of puff pastry at a time. Using the creases as a guide, cut each puff pastry into 6 pieces. You will have a total of 18 pieces.
Place about 1/3 cup of the mixture on nine of the cutouts. Leave a slight border.
Paint the edges of the fruit covered puffed pastry with some of the egg mixture. Place an unfilled piece of pastry on top and press the edges together. Place on a parchment-lined sheet pan. Once all of the pies are made, using a fork, gently press all of the edges together. Brush with the egg mixture, sprinkle each pie with 1/2 teaspoon of raw sugar, and then cut three slits on top of each pie. If preparing ahead, the sheet pan can be placed in the freezer with all of the pies. Once completely frozen the pies can be transferred to a container. Place parchment paper between the layers of the pies. The above picture shows how I freeze the pies. When baking don't overcrowd the pans. Either use two pans or bake in batches. Bake in a preheated 400-degree oven until golden. Frozen pies can take about 30-40 minutes to bake and unfrozen pies about 20 minutes.
