If your garden is overflowing with zucchini, I’ve got the perfect recipe to help you put it to delicious use. My Air Fryer Zucchini Fritters are a fantastic way to enjoy the season's fresh flavors. These fritters are loaded with vibrant herbs, tangy feta, and a burst of flavor in every bite. The best part? They’re made in the air fryer, so they’re not only crispy and golden but also healthy! To take them to the next level, I love serving these patties with a generous dollop of Greek yogurt, adding a creamy, tangy finish that perfectly complements the savory goodness of the fritters. Whether as a snack, side dish, or light meal, these fritters will surely be a hit!
Ingredients for Air Fryer Zucchini Fritters:
2 pounds zucchini, grated
6 ounces crumbled feta
1/4 cup chopped scallions
1/4 cup flour
zest of 1 lemon
1 egg, lightly beaten
2 garlic cloves, minced
2 tablespoons chopped dill
1 tablespoon chopped mint
2 teaspoons baking powder
1 teaspoon kosher salt
1/2 teaspoon black pepper
cooking spray
Time-Saving Tip: Prepare the fritters and refrigerate for an hour before cooking.
Let's see what we need.
We're ready to cook.
Grate the zucchini by hand or using a food processor. Then, transfer to a colander that rests inside the bowl. Toss with the salt and let rest for 30 minutes to an hour. Transfer the zucchini to a towel and squeeze out the excess liquid. Save the liquid for a smoothie or soup.
Combine the zucchini, pepper, dill, scallions, mint, flour, baking powder, garlic, and zest, and then fold in the cheese. Shape into 12 equal-sized- patties, about 2 inches in diameter. Refrigerate for an hour.
Preheat the fryer to 400 degrees. Coat the rack with cooking spray and gently transfer the fritters to the fryer. They are delicate, so take your time. Cook for 7 minutes, carefully turn them over, and continue cooking for another 7 minutes or until golden.
They’re ready! Air Fryer Zucchini Fritters have quickly become a favorite in my home. I’ve learned always to make extra because they vanish as soon as they’re out of the air fryer!
Enjoy!
