I've been having so much fun using my air fryer and decided to take a walk on the sweet side and make Air Fryer Cherry Hand Pies. These are crisp, bursting with cherries, and delicious. I love how I can have a homemade warm piece of pie without heating the kitchen. These disappeared as quickly as they cooked, and I can't wait to make them again.
Ingredients for Air Fryer Cherry Hand Pies:
1 package of prepared crust
3 teaspoons raw sugar
4 inch round biscuit/cookie cutter
Filling:
1-10 ounce frozen sweet cherries, drained-reserve juice
1/2 cup reserved cherry juice
1/4 cup granulated sugar
1 tablespoon + 2 teaspoons cornstarch
1 tablespoon lemon juice
Egg Wash:
1 egg + 1 tablespoon water
Time-Saving Tip: Prepare the pies earlier in the day and cook before serving. Or even freeze the pies before cooking and allow an extra minute or two for cooking.

Defrost and drain the cherries. Combine the filling ingredients and gently cook for 3-4 minutes until the mixture is well combined and thickened. Cool to room temperature.
Unroll each pie crust. Using the ring, cut 7 circles. Roll out the remaining dough and cut out another circle. Each crust will give you a total of 8 shells. Fill each shell with about 1 tablespoon of filling. Dot the perimeter of the dough with the water. Fold the dough over to make a half-moon and press and seal close. Use a fork to seal the edges. Repeat with all of the dough and filling. When done, you will have 16 pies.
Brush each pie with the egg wash. Next, sprinkle the raw sugar evenly over each one. Finally, make three slits on each pie.
Lightly coat the bottom of each pie with cooking spray. Transfer 4 pies at a time to a preheated 350-degree air fryer. Place the pies on the grate and cook for 8 minutes.
