Homemade ricotta is just creamier, smoother and more satisfying than store bought. It is also easier to make than one might imagine. Give it a try... I promise you will be very happy.
Ingredients for Homemade Ricotta:
yields 1 cup
6 cups whole milk
2 tablespoons distilled vinegar
1 tablespoon fresh lemon juice
3/4 teaspoon kosher salt
You will also need some cheesecloth, a strainer and a pot.
Time Saving Tip: Homemade Ricotta can be made earlier in the day then when you plan on using it.
For a richer ricotta substitute two cups of cream for 2 cups of the whole milk.
Let's gather up what we need.
Now it is time to make ricotta.
Combine the milk, vinegar, lemon juice and salt in a pot. Stir and bring to a simmer. Simmer a couple of minutes until the milk looks curdled.
Pour the contents of the pot into a strainer lined with a few layers of dampened cheese cloth resting over a large bowl. Drain out the liquid. Depending how much liquid you drain you can have soft ricotta or dryer.
It's now ready for you to use. I love tasting it just as is. It's delicious.
